PB Cup Pretzel Banana Blondies

A gluten free, paleo, and flourless blondie that is sweetened only with bananas. Upgrade the classic blondie with salty grain free pretzels and no sugar added peanut butter cups from Lily's!

Ingredients
  

  • 1 banana mashed
  • ½ Cup Peanut Butter sub any nut butter
  • 1 egg
  • ¼ baking powder
  • 1 tsp vanilla extract
  • 2 Lily's Peanut Butter Cups chopped
  • ½ Cup Fit Joy Pretzels pulsed/finely chopped

Instructions
 

  • Preheat the oven to 350°F.
  • Line a 8x8 baking dish with parchment paper and set aside.
  • In a large mixing bowl mash one over ripe/ soft banana with a fork.
  • Add the peanut butter, egg, and vanilla to the bowl and stir well.
  • Next add the chopped PB cups, pretzels and baking powder and mix until well combined.
  • Pour the batter into the parchment lined baking dish and bake for 30 minutes or until a toothpick inserted into the batter comes out clean
  • Let cool in the pan for 10 minutes and then another 20 minutes on a cooling rack.
  • Cut and enjoy!
