Seriously though, I wish there was such thing as smellavision because these soft baked ginger snap cookies are heaven!
Imagine the sweet smell of cinnamon and molasses heating up and wafting all around your house with the snow falling and Christmas lights glowing because that’s my current situation right now and I never want it to end!
Dare I say healthy?
So I want to say that everything in moderation is healthy and if that means eating cookies daily during the holidays than I am 100% on board! Especially when it comes to these soft baked ginger snap cookies!
I fully believe that all foods fit but for some that might look a little different due to your own health situation. For me I have dealt with reoccurring candida and am overly sensitive to gluten even though I have not been diagnosed with celiac. For me I have had to cut a lot of foods out and then reintroduce them and then cut them out again as I figure out what I can and can’t tolerate.
Everyone has their own specific needs and can tolerate different foods better which is why I find food and nutrition so fascinating.
Everyone’s version of “Healthy” is so different and what works for one person may completely throw someone else’s health off balance.
What I find healthy other’s may disagree and that’s perfectly okay! I am going to school to educate not force any specific diet onto anyone.
My Healthy: might change in a few months, few years and maybe even in a few days but right now it’s enjoying the cookies, the salads, the chocolate and everything in between but choosing ingredients that I know I can tolerate. Right now that’s gluten free and low sugar foods with a ton of probiotics because my current digestive situation is not the best and I am okay with admitting that.
The scoop on these soft baked ginger snap cookies!
I just want to give a big shoutout to a very social medialess friend of mine for this recipe because these cookies are hands down my favorite cookie recipe of the year!
Originally the recipe was the basic flour, sugar and seasonings but I swapped a few things out to make them gluten free and lower in sugar and you can’t even tell there’s a difference from the original recipe!
The best part is I can eat them without the fear of feeling like crap later on (due to the gluten ones I originally fell in love with).
Combine softened butter, monkfruit sweetener and cream together
Add the molasses and vanilla and mix well.
Add the remaining ingredients and stir until well combined.
Preheat the oven to 325F
Bake in the oven for 10-15 minutes.
Note: They will be really soft when you pull them out of the oven. Let them cool for a few minutes on the pan and then transfer to a cooling rack to finish cooling
I adapted these cookies to make them gluten free so if you’re not gluten free regular flour works here as well!
I would just like to say that there is really no way to mess these up! I have tried several different flours, different amounts of sugar and got lazy a few times and just dumped in the ginger and cinnamon with out measuring and every batch turned out really well!
