Single Serve No Bake Vegan Cosmic Brownies

It’s no secret I love making no bake desserts especially with chocolate so when my mom came home with a box of cosmic brownies it hit me that I really really wanted a cosmic brownie (but the real deal cosmic brownies are not gluten free) so I came up with these No Bake Vegan Cosmic Brownies and added some blue icing (because I love blue!) and some sprinkles to the top. 

WaaaLaaaa a classic childhood dessert reimagined!

These are Gluten Free, Vegan, Grain free, paleo, with only 5 ingredients oh and of course NO BAKE!

5 Simple Ingredients

Yes! Only 5 ingredients and you most likely have them all in your pantry!

  • Walnuts
  • Dates
  • Cacao Powder
  • Maple Syrup
  • Almond Milk
  • (salt if you want!)

Sound easy enough?

Well they are!!!

10 minutes Later...

Yes (again)!

You only need 10 minutes to make these brownies so anyone as inpatient as me will really enjoy these!

I love baked good but the waiting for them to bake is annoying to me and I always end up forgetting to take them out when the timer goes off … so most times I burn whatever it is that I’m baking.

With these Vegan Cosmic Brownies there’s not even a chance to burn them!

Making the brownies

First thing I always like to do is get all of the ingredients and measure them out before hand so that the process goes smoother and I somehow make less of a mess in the process of making whatever it is I am making (AKA these brownies)!

Once you have all of your ingredients add the Walnuts to a food processor and pulse until finely chopped. 

Add the dates and pulse again until the dates are finely chopped as well.

Now add in the cacao powder, maple syrup, almond milk, and salt and process until a dough forms. (It usually forms one large ball)

Once everything comes together and forms the dough take about half of the brownie batter and press into a silicone muffin tin . 

Place in the fridge while you make your frosting (if you want)


Frosting Ideas

I have made these brownies about 4 times now and each time I top them differently so really the way you top them is totally up to you but my favorite way was with coconut butter and sprinkles!

Here I just used about 1/4 cup of coconut butter and drizzled it over the brownies and then stuck them in the fridge until the coconut butter solidified.

I have also done the more classic chocolate ganache with

  • 1/4 cup chocolate
  • 2 Tbsp coconut cream
  • 1/2 tsp vanilla extract 

You could even do just plain chocolate frosting you buy from the store!

What’s not optional (in my opinion) are the sprinkles!! Please do not forget those sprinkles!

Storing the Brownies

If you don’t eat these within the hour you can definitely keep them stored in the fridge for a week or freeze them for later!

The title honestly says it all but these brownies are made with nuts, dates, cacao powder and some maple syrup and require no baking, are vegan, paleo and only require a small food processor!

Equipment

  • Food Processor

Ingredients
  

  • ¼ cup Walnuts
  • ¼ cup Dates
  • 1 Tbsp cacao powder
  • 1 Tbsp Maple Syrup
  • 1-2 tsp almond milk
  • Pinch of salt

Instructions
 

  • Add walnuts to a food processor and pulse until finely ground.
  • Add dates and pulse until there are no more chunks.
  • Add the remaining ingredients to the food processor and pulse until the brownie dough forms into a small ball.
  • Form into 2 brownies (about palm sized) or make into bite sized balls for smaller servings
